Elegant Eat, our pop-up restaurant, is back this week on Thursday and there are now only 12 places remaining for this exclusive night for the 8.30pm sitting.

This exclusive restaurant is only open on 10 November with sittings at 7pm, 7.30pm, 8pm and 8.30pm. We now have no space available for the 7.00pm, 7.30pm and 8pm sittings which are all sold-out.

Located in the Warwickshire Suite, this contemporary fine-dining restaurant overlooks the famous Edgbaston pitch, has its own bar and lounge area with guests being able to relax in very comfortable surroundings which reflect the spirit of fine-dining.

The menu has been developed by Dave and four of his young chefs, Tom, Adam, Matt and Jake who have all created a course each allowing them to develop a fantastic tasting menu combining traditional ingredients with fun and imaginative twists, showcasing the chef’s personalities.

We caught up with Executive Chef, Tom, who has designed three stand-out dishes of our Elegant Eat menu.

STARTER: PIGEON COOKED IN HAY

This delicious seasonal starter opens Elegant Eat in style. This first-class course is something you would expect at the most contemporary and renowned fine dining restaurants. The sweet pumpernickel tones contrast sharp juniper and blackberry to bring out the best in this delicate gamey dish.

FISH: STONE BASS MARINATED IN SQUID INK

This is a healthy and flavoursome cooking at its best. Marinated in squid ink, our sweet and succulent Stone Bass cube is complemented with an aromatic spiced Thai fish cake, earthly beetroot and underpinned with highlights of punchy and sharp horseradish. This dish is cooked to precisely 42 degrees which is the optimum temperature to preserve the texture of this incredible dish. We promise this unique fish course will be utterly unforgettable!

MAIN: FILLET OF PORK

This dark and sticky glazed slow cooked pork belly is a delicious moist meat bursting with warm citric flavours and is the star of the show in our fine dining experience. Accompanied with a rich black pudding, a pan fried pork fillet and elegant pork puffs, this course provides the last dregs of Edgbaston sunshine before the long winter sets in.
